What's with the later seasons showing less and less of twilight?

In the first season we start off almost every episode with Twilight and Spike, by season 8 you hardly see her.

You watch the other pony's on missions while she stay at the Castel to "watch it/take care of it"? What happened?

Was Twilight not doing well with marketing? Because she doesn't even feel like a main character anymore, she's just shoved to the side and used as a device to give the other ponies missions

(she's gets almost as much screen time as prices celestia it feels like)

Starlight seems to have replaced her as main character. Anyone have any clue why they did that?

So apparently, Celestia has been imprisoned into the moon for years and the night is everlasting. Logically, all of Equestria should be a barren frozen wasteland since we need sun to grow and keep the Earth warm yet not only does everything in the Lunaverse seem normal, the mention of a "tourist" and "castle viewings" means there's a functioning society within the Lunaverse, but this shouldn't be possible because if there was an everlasting night, everything would die within a few months, so what's going on?

Scenario

In the future, Twilight still looks young and healthy, having never physically aged out of her early 20s.

Her friends, however, have aged normally. They are all very old, with wrinkles and white manes. They have all outlived Granny Smith and lived to see their grandchildren, great-grandchildren, protégés and businesses flourish.

Most of them are still there mentally and physically (within reason: Rainbow Dash has long retired and Applejack doesn't do the farm work anymore. Even Pinkie Pie is more "cheerful grandma" rather than the quick-reflexed mare she was in her prime), but it's clear that this is near the end.

When Rarity becomes too weak to come to the annual meetings, Twilight decides to see if there is a way to turn her friends young again as she realizes that they don't have much time.

She discovers a magic potion that can turn an old pony back into a young pony. Without Discord (who was destroyed in a battle against Typhon decades prior), the hunt to gather the ingredients is tough, but Twilight prevails.

She goes to each friend and tells them what she has. There is enough for all of them, as well as their spouses, children and even grandchildren when they get older.

She's even studying how to make more ingredients so that this can even be mass-produced and no one in Equestria ever has to grow old and die.

Would Twilight's friends drink the potion? What would they think about her plans to make Equestria a land of functional immortals?
