Rescued horses with unexplained health problems

I've known this horse for about a year she was basically abandoned. She is APPARENTLY half Egyptian Arabian half quarter and around 15 years old (from her teeth) we don't know too much about her because the guy we got her from is really mentally ill and he's lied a few times. She was fine and looked healthy with the creek and hay bales for awhile but when winter came the creek froze up and she started getting out a lot for water so the owner finally decided we could take her in. We've had her for about seven months and about two months in and we started to notice she wasn't eating very much or drinking much water. She also had a lot of fluid coming from her nose. So a vet came out to sedate her and check her mouth because it's extremely hard to get into her mouth I'm not sure why but I think it has something to do with a scar on the side of her mouth. Anyways once we started looking everything seemed pretty normal except for the roof of her mouth (the hard pallet), it was like a sponge it's hard to explain but it was squishy and almost down to the bottom of her front teeth. The vet said she has never seen anything like it, we thought there might be a pocket of fluid in there so we put her on an antibiotic. I've been trying to check her mouth and I've gotten to feel her hard palate a few times it seems better but I haven't gotten a chance to really tell. Since then it seemed like she was eating really good and drinking a lot more water but she was still losing weight daily. We decided to have her graze for about six hours a day on green grass and we have a hay bale, sometimes flakes as well and grain but now it just seems like her weight has just stabilized. She isn't gaining weight like she should but she's not losing it at least. We went away for about three days and we couldn't let her graze while we were gone because the people we had take care of them didn't know much about horses and we also have a blind horse so it would've been a mess lol but in just three days of not grazing on green grass she lost some weight. I've also noticed some lumps under her belly and on her neck, which really worries me. She also seems very weak at times like she'll act like her legs give out and she'll trip but she is wide awake. She's had all of her shots and wormer. I've been trying to find another local vet hoping that maybe they will know what's wrong. But if anybody has any ideas please let me know I would really appreciate it. If you have any questions just ask, I would love to answer them if it means I could get closer to figuring out what's wrong with my horse. Thank you
